Ingredients
For the lava cakes
- 1 stick (4 ounces) unsalted butter, plus more for greasing the ramekins
- 6 oz. bittersweet chocolate
- 2 eggs
- 2 egg yolks
- 1/4 cup sugar
- Pinch of kosher salt
- 2 tablespoons all-purpose flour, plus more for dusting the ramekins
For the cherry-orange compote
- 1 lb. of cherries
- Juice of half an orange (3-4 tablespoons)
- 2 tbsp. sugar
Tools to Gather
- Baking sheet
- 4 6oz. ramekins
- Double boiler (2 similarly sized pots, or a pot paired with a bowl or pan that can rest above)
- 3 Medium bowls
- Saucepan
- Beater
- Whisk
- Dessert plates
- Slotted spoon
Start by washing and pitting the cherries.
Preheat the oven to 450 degrees Fahrenheit and prepare the ramekins by greasing the bottoms and sides with butter and lightly flouring. Tap out any excess flour and place the ramekins on a baking sheet.
Add cherries, sugar and orange juice in a medium sauce pan and cook over medium heat for 5 to 6 minutes until cherries are wilted and soft.
Remove cherries with a slotted spoon, placing into one of the medium bowls, and continue cooking the liquid for 2 – 3 more minutes until reduced in half and thickened. Add cherries back into the pot and stir to combine. Keep over very low heat while the lava cakes bake.
In a double boiler, over simmering water, melt the butter and chocolate together.
In a medium bowl, beat the egg yolks, sugar, and salt at high speed until thickened and pale.
Once melted, add the chocolate-butter mixture to another medium bowl and whisk until smooth. Quickly add the chocolate to the egg mixture, along with the flour, and fold in using a spoon.
Spoon the batter into the ramekins and bake for 8-10 minutes, watching for set, dry edges and a slightly jiggly center.
Remove from oven to let the ramekins sit and cool for one minute, while you stir the compote and make sure it’s at a nice temperature for serving.
Cover each ramekin with a small serving plate, then carefully flip and let stand for 10-15 seconds. Gently unmold the cakes, spoon over your compote, and serve immediately.
